Our tomini are fresh cheeses obtained from sheep milk enriched with various spices. This cheese is great by itself or is very tasty baked or grilled and accompanied by cooked or raw vegetables. Perfect with light white and red wines.
Whole ovine milk pasteurized at 72 ° C and then cooled down until reaching a temperature of about 36 ° C. The cut of the curd is the size of a grain of corn and the addition of the ingredients, such as spelt, hot pepper, black pepper, almonds and truffle, takes place during the cut of the curd. They are left to age for about 15 days, after which they are stored under vacuum.

The taste and flavour: savoury and sweet, spicy for the types with chilli and pepper. Sweet and pleasant to the palate for the spelt and almonds versions. Aromatic and intense with the truffle. Its basis is nevertheless delicate and fresh.
