For love of nature

Volterra is famous throughout the world for its history of Etruscan, Roman, Medieval and Renaissance cities; for its unique landscape of cliffs, gullies and terrestrial graves; for its traditional alabaster processing in artisan shops. It is in this context of open territory and cultural deposit that my Lischeto livestock farm operates and where the new but ancient craft of the cheese-maker arises.

My activity began in 1991, exploiting the traditional experience and knowledge in the field of pastoralism of the family people who were and are closest to me.

Speaking with them, in front of a good glass of wine and lit fire, or in the cool of an elm in front of the house, I learned how to dose the ingredients in milk, how to calculate the aging time of the forms, what differences exist between pastoralism Sardinian and Tuscan; what ancient secrets needed to be known in order to obtain unrepeatable flavors and aromas.

Quality

These were the essential elements to characterize my products in terms of quality, in front of a market that impoverishes daily the most authentic and healthy activities I chose to adopt the complete biological cycle of processing: sowing and harvesting fodder, selected breeding, which together with the climate, the earth, and the process of artisanal production, they affect the final quality of the cheeses, as well as for other aspects and other places we have for meat, wine and oil.

From the first original quality products: pecorino, ricotta, raveggiolo, today they are able to offer different and original cheeses resulting from my research and the recovery of old recipes.

All this has allowed me to expand my market, to let people know and sell my company’s products in specialized stores in various parts of the world.

Cheese Factory

The work with the cheese dairy began in 1990 and follow the norms imposed from the CEE. We keep and develop the traditions of typical tastes of sheep breeding in Tuscany and we work only the milk of the sheep present on the farm.
We produce also cheese pecorino made up of raw milk, not dealt thermally, like in the millenarian tradition of cheese making: those are type of cheese difficult to work, by now rare to find, but with an unmistakable taste, synthesis of technological rigor and ancient knowledge.
You will be able to choose between a wide range of different cheese: the fresh and delicate taste of Pecorino degli Sposi; the Rosso Volterrano, matured for 2 months, fragrant and intense, treated on surface for 2 months with tomato concentrate and olive oil; or still the characteritic Balze Volterrane, made of raw milk, matured in oak barrels and under ashes of olive trees, delicate and sharp, great with sweet wine; and then the Maschio, 180 days in cave, delicate and sharp; also the somptuous Cacio del Monsignore, made of raw milk, one year under wheat in a barrel, to eat together with a great red Tuscan wine. And then Ricotta, Raveggiolo, Baccellone, Tomini….

Organic shop

Within our Farm Holiday House “Agriturismo” our Shop is open to all visitors.

Here you can buy all our organic products directly: Cheese made from sheep and cows milk, yogurt, extra virgin olive oil, honey, home made fresh pasta, cosmetics and other organic products from companies within our territory.

For our fresh products, such as; ricotta, yogurt, raviggiolo, stracchino and home made pasta, we advise anyone who is interested in these to call or write to us at commerciale@agrilischeto.com to see is these products are available.

On request we can prepare our “delicious” baskets, for Christmas, company presents or for any type of event.

Our organic shop is open to the public from Monday to Sunday 9am – 5.30pm.
