INGREDIENTS: ewe's milk, salt, natural rennet, milk enzymes.

DESCRIPTION: Mature cheese has the same features as semi-mature cheese although it has been ripened for a longer period of time.
This is a white, slightly open-grained pecorino cheese with a full delicate taste ripened under a protective covering of olive oil sludge.
Maturation minimum of 180 days in cave temperature.

PACKAGE: vacuum packing.
